The move — dissolve sugar in warm water first; add garlic and chili last so they float.
Ingredients
- 3 tbsp Son fish sauce
- 3 tbsp lime juice (about 2 limes)
- 3 tbsp sugar
- 6 tbsp warm water
- 2 cloves garlic, minced
- 1 bird’s-eye chili, thinly sliced
The method
- Dissolve the sugar in the warm water — completely, no shortcuts.
- Stir in the fish sauce and lime juice. Taste: bright, then salty, then sweet.
- Add the garlic and chili last so they float.
- Serve in a shallow bowl. It keeps a week in the fridge — it won’t last that long.
